Margaritas. A drink that is simple, tasty and very refreshing.

People that know me know I am a marg aficionado and that I love to experiment with them, much like my friend Kelly Cordes (check his blog with plenty of marg recipes and climbing goodness). Kelly had made some really good ones.
So I thought it would be great to share a very minimal yet awesome margarita recipe with all of you.

The main ingredient of a good margarita is the Tequila, therefore you should invest on a good bottle. Also, you should use fresh limes whenever possible. My personal favorite is still Cabo Wabo Añejo, followed closely by Patron Reposado.

The recipe:

4 parts tequila
3 parts lime juice
3 parts triple sec (or Contreau if possible)
1 part simple syrup
How to make it (I like to make a lot of marg so I usually make enough for 4 glasses):

Start by creating the simple syrup. Boil 1/2 cup of sugar and 1/2 cup of water until the sugar dissolves. Dump the simple syrup into glass container, put it in the fridge and let it cool.

Squeeze fresh limes to get 3/4 of a cup. Make sure to press and roll the limes before you cut them in half to squeeze them, that way the juice will be easier to extract.

Grab a cocktail shaker and put:

1 cup tequila
3/4 cup of lime juice
3/4 cup triple sec
1/4 cup simple syrup
mix all and let it get chilled in the fridge for 15 minutes or so. Add ice to a marg class, pour marg and enjoy.

Yes, margaritas should be on the rocks. I prefer them without salt but you can add it.
